How to Place Your Order
Because Salazar Natural Beef is a small family owned ranching operation, and we believe in service with a personal touch, we will call you back and work through the process of putting in an order. Be prepared to answer some of the following:
- Do you want to come to the ranch and select your own live animal? If so, when? Or do you want one of our standard packs of meat?
- When would you like your beef ready for delivery? (Date and Month)
- If you buy the live animal, what processing facility do you want to use? (We can recommend one if you have no preferences)
- How do you want to have your beef packaged? This option is available when you buy your beef live or "on the rail" in non standard pack. Some information which you will need to provide to the processor is as follows: thickness of steaks and number of steaks per package, pounds of hamburger per package, size and types of roasts, do you want the oxtail, liver, kidneys, etc.? Do you want your meat double wrapped or vacuum packed?
- How long do you want your beef aged before packaging? Our normal aging is 14 days.
- If you choose to have your meat custom processed you can print out this form and either mail it or fax it to the ranch or to the processor. FORM TO PRINT OUT!

Things to Consider When Placing Your Order
There are three different ways to order your beef.
You may put in an order for a steer weighing from 900 to 1100 pounds "on the hoof" or "live". This steer will normally dress out at 350 to 450 pounds. The price is based on the "hanging" or "rail" weight of the steer which is usually from 52% to 56% of the live weight. Some families will share a "beef" with each family taking a quarter or a half a "beef".
The customer owns the beef as it leaves the ranch live for a butcher shop of his or her choice. Salazar Natural Beef will deliver the beef to the butcher shop. Various packaging alternatives are available from a number of processing facilities. We can help you find an appropriate facility near you, or you can choose a local facility in the San Luis Valley. Customers are invited to come to the ranch to see how the cattle are raised or they may come to the ranch and select their own animal. The cost of Salazar Natural Beef "on the rail" is between $2.50 and $3.00 per pound.
You may also order beef packaged under the Salazar Natural Beef label in different size of packs. This beef has been butchered and packaged under USDA inspection. A pack may be ordered in one-eighth, one-quarter, one-half, or whole beef packs. A quarter beef pack will weigh between 90 and 110 pounds and will consists of approximately 25% steaks, 25% roasts, 40% hamburger and 10% other meats. The cost of these packs is based on a packaged per pound basis, with cost between $4.00 and $5.00 per pound.
You may order steak or ground beef packs packaged under the Salazar Natural Beef Label. The steak packs are sold at $8.00 per pound and the ground beef packs are sold at $3.90 per pound. Minimum orders are 30 pounds. Gift packs are also available.
