The standard packs sold by Salazar Natural Beef contain about 30 percent steaks, 25 percent roasts, 35 percent hamburger and 10 percent miscellaneous meats such as short ribs and stew meat.
A 1000 pound steer will typically yield about 400 to 440 pounds of packaged meat. Typical steak cuts are t-bone, sirloin, rib, round, and chuck steaks. Typical roasts are round, rump, arm, chuck and brisket roasts. You may have some of your steak and roast meat made into lean ground beef. The miscellaneous meats include, flank steak, short ribs, stew meat, and even liver if you want. You also have the kidneys, oxtail, and other parts if you want the processing facility to save them for you.
